Savory parmesan scalloped potatoes.  Definitely a crowd pleaser.


What you'll need:

Potatoes. About 2 pounds.  Anything but the sweet ones

Half of one medium onion

1 cup parmesan cheese.  The real stuff.  Not that powdered junk.  Shredded or grated

3 Tbsp butter

3 Tbsp flour

1/2 cup milk1 tsp salt

1/2 tsp pepper

Medium sized saucepan8x8 baking dish or 2-3 quart dutch oven

How To:

-Preheat oven to 350 degrees.

-Peel potatoes and slice to 1/8 inch thickness using your desired slicing device.  I like using a mandolin.  Place in water to prevent browning.

-Slice onion using same device to the same thickness.

-Melt butter in a medium saucepan at medium/low heat.

-Once melted add flour to the butter and mix till it forms a paste.

-While stirring, SLOWLY add the milk to the paste.

-Once milk is incorporated add the salt and bring ALMOST to a boil.  Watch your heat so the milk does not scorch.

-Add the parmesan cheese and stir until the cheese melts.  Remove from heat and lid to retain ooey gooey goodness(keep it warm).

-Grease the pan and layer about 1/2 of the potatoes on the bottom.  Add 1/2 of the sliced onions on top and sprinkle with 1/2 the pepper.

-Add 1/2 of the cheese sauce on top of the potatoes.  Repeat the previous step adding the other 1/2 of the cheese sauce on top of the next layer.

-Evenly spread last cheese layer on top of the potatoes and onions.  

-OPTIONAL sprinkle with paprika for color.

-Bake covered for about 30 minutes

-After 30 minutes uncover and bake for another 30 minutes.

-Potatoes are done when a toothpick or fork can easily be pushed to the bottom of the pan.-

Sprinkle with green shit if you want it to be pretty(chives, parsley or whatever)

-Enjoy
